If you have cooked in the kitchen and produced flavors that make history this is memorable. When my life comes to close many many many many years from now…. I want the memories of food, friends, and life to fill all my senses , so I can say

” I tasted life and it was phenomenal!”

Over recent years I have developed a “flare” for cooking, a  gift passed down from my parents.  I can recall somewhere in history someone – I think the Dali Lama said-

” Cook with reckless abandon”

Food is an incredible experience when it is approached with the all the senses, and shared with others. This page will be filled with thoughts , recipes, places attended where food was key!

Brian's Chicken and Carbonara Lasagna

Warning! There is nothing calorically healthy in this recipe, but it is awesome in flavor! 

I came upon this simple as an experiment to see if a soup can be converted into a casserole. The answer......YES. It has all the flavor of the french soup and cuts very well as a casserole. There is very little healthy in this recipe but as a comfort food for the fall or winter months, its right up there with mac n cheese!

    I wish I had a picture to go with this recipe however , to describe it would be better.

 

This is a spicy dish that can be eaten as a meal in itself. Chickpeas are high in protein. I also did this off of memory from web page I was looking at but could not find to go back and double check. The result is something fresh and flavorful. The onions add a nice undercurrent of heat to the other spices used. This just might be a perfect fall or winter dish. Serve it as a meal or as a side dish. The color is a vibrant neon green from using fresh spinach.

Brian's Pizza Cream Cheese Recipe

I was preparing for a get together one evening, having asked a friend to  pick up bagels and make some herbed butter, I decided I needed more options. Bagels are great with buttter and great with plain cream cheese but everybody needs some introduction to other possibilities. I started putting seasonings in the cream cheese for what I hoped would taste like a pizza. Success! It is a great alternative as a condiment for sandwiches or a snack. 

Brian's OctoberFest Soup

This was another creative frankenstein in the month of October...yeah go figure. Imagine if you could eat a sauerkraut and bratt as a soup instead of a sandwhich... I know.... that's what I said.  So I started dumping ingredients into a soup pot and prayed that the outcome was good. Well... He kicks .... It is Good! ....Score! Chicken Dance!

Brian's  Winter Short Rib WhiteLasagna Roll Recipe

This turned out to be a delicious and truly rich dish that the portions should be labeled " one and done"! Attempting seconds in the same meal might get you labeled a glutton!

Cajun Jim's Red Beans ,Shrimp  & Quinoa 

My better half created this dish one evening, proving once again that healthy alternatives don't have to be bland or lacking in substance. This dish is just the opposite it has incredible flavor, powerful spice and doesn't leave you feeling weighed down by the end of the meal. 

Just created this recipe this weekend (Valentines Weekend). I was thinking of a new way to do the poppers recipe and it was a success. You will need to dedicate an overnight process and have a mini muffin/ quiche pan  for the process. While the frying may not be healthy... the flavor is beyond match! Using quinoa gives you the extra protein if you are looking for the "healthy". The amount is also an incredible freezer full! You can pull out and prepare for frying as needed.

This recipe came about while watching the news on the morning of the superbowl this year. A neat alternative to regular wings. The longer these marinade the stronger the flavor soaks into the chicken.

AAlmost two years ago I came across this idea while trying to change out an idea for a recipe from a long time ago. A friend of my mom's made pizza chicken when I was a kid and I just decided to modernize the method and add some bruschetta pasta. The pasta by istelf is a meal.
